Thursday Inspiration: Make Me Laugh

Life can get really stressful at times.  It get get so overwhelming that we don't even know what to do next.  If there were more minutes in the day you'd actually take it just to accomplish everything you need to do.  Sometimes we get to a breaking point where we can't take it...get frustrated.  Then the next best thing to do is laugh.  Laugh really hard that you snort.  It's good for you.

These might get a chuckle or two...
Let me know what you think...

Vietnamese Food: Not Just Pho

Sometimes when people think about Vietnamese food, Pho (prodounced "fuh") which is a beef based noodle soup with noodles, with meat.  It is often personalized with various condiments such as mint, cilantro, basil, bean sprouts, limes, chili peppers, and an array of sauces.

I do like Pho, but my go-to dish is called "bun thit nuong cha gio" which is cold rice vermicelli noodles mixed with fresh vegetables and topped with marinated barbecued pork, served with nuoc cham sauce and some fried spring rolls.  It would be considered as a summer dish but I can eat it any time of the year!

The meal is complete with taro bubble/boba tea! I get the "slushy" variation mixed with taro and the boba which are tapoica pearls.  So yummy!

Going to my favorite Vietnamese restaurant is not complete without stopping by the Asian market next door.

Thai eggplant.  Thought I'd show some interesting vegetables not usually found at your local grocery store.

Thursday Inspiration

Making, creating, tinkering...I love doing all of the above.  It is important to have a creative outlet to de-stress and be more in tune with one's imagination.  Go find something that you like to do besides what you normally do...paint, doodle, cross stitch, embroider, knit, or write...

Go do something that will get your creative juices flowing!

I'm Going to the Valley

It was a nice September day.  My husband and I were both wondering where to go for lunch, which can sometimes be an on going question.  "Where do you want to go?" would be asked.  Then the answer would be "wherever you want to go..what do you feel like having?".  Needless to say, this time it was a pretty easy decision, and it was time to venture off to Valley Burger Shack in Seymour, CT.  This restaurant is a no frills, order what you want and find a table kind of place.  The service is fast and the food is very tasty.  They did have a buffet that served a variety of hot foods; from ribs, chicken wings, to stuffed cabbage and fried rice.  There is something for everyone.  I went with my usual staple the cheeseburger with fries, whereas my husband went with the chili dog with bacon, steak and cheese, and sweet potato fries.  Yup, we were definitely full. I find it nice to take a drive on a nice day to go to small, locally owned restaurants.  For more information check out their Facebook Page

Ten Years Ago 9/11

Always remember those that lost their lives, the families that have been affected, and those that fight for our freedom every day.  We will always remember 9/11.

Staying Cozy with The Cozy Project

It's getting chilly here in New England.  We're having a weird transition into the fall season.  Along with that change, is my consumption of iced coffee to hot coffee.  One chilly morning I decided to get hot coffee, and noticed that something was missing - a cozy.  The same day, I decided to order a coffee cup cozy from The Cozy Project and picked one with an apple to go with the back to school season. I just wanted to show off what I got in the mail.  As you can see Jenny P from The Cozy Project takes the time with presenting a great package along with a little thank you note! The cozy itself is nicely made with great details all the way down to the tag inside (which I didn't take a picture of).  I'm very excited to have this in my purse so that I can use it when I get my morning cup 'o joe!

Kamsamnida

It was a very long week at work.  I probably put in 50 hours without knowing it, and I definitely felt it.  I needed some good food, and a good drink to ease my tired, worried, anxious self.  It was time for a trip to a Korean restaurant that I've been wanting to try for a long time.  My husband happily agreed to take me out for dinner to Yamadora Restaurant.  We were both excited to try this new place because they have tabletop grills just like those found in Korea Town in Flushing, Queens NY where we usually go with his family.  The place was very clean and very busy with customers.  Also, a sign of a good Korean restaurant is when you see Koreans eating there too!  We started with a bottle of Soju, a Korean rice wine that is served cold.  It definitely calmed the nerves after a long stressful week.  We ordered Korean fried dumplings and the piece de resistance was the Daeji Bulgogi which is a spicy pork Korean barbecue and the Kalbi/Galbi which is marinated short ribs.  Both meat dishes were cooked right on the tabletop grill in front of us by the waitstaff.  It was definitely delicious, and I loved not having to drive all the way down to New York for these tasty dishes.  Along with the main course, they also served us banchan which were small side dishes.  Some of the banchan included; gaji namul (boiled eggplant), kimchi (fermented cabbage), sigeumchi namul (parboiled spinach w/sesame oil, garlic, and soy sauce), muchae (julienned white radish with sweet vinegar sauce), along with ssamjang (bean paste), jalapeno peppers, lettuce leaves, and of course a bowl of white rice.  The whole experience was delightful, and both my husband and I were very pleased with our dining experience.  The food was great and the Soju was even better! Thank you Yamadora! Kamsamnida!

Yamadora Kalbi on the grill.

Nothing like cold Soju to end a long week.

Until next time, go do something that makes you happy!
